Unbelievably easy to make and only took me about 30 minutes to prepare! You only need to make this twice or thrice and you know the recipe by heart! I made these for Eid as a treat for my friends and they all loved it! These little guys work perfectly as a sugar fix!
My favorite thing about this recipe is the Pecans,I love everything Pecan and if you are like me, then you will absolutely devour these in two days… Not saying that I did that…. 😉
My dearest husband gifted me a KitchenAid and I’ve been using my new toy for literally all my baking prep, I am so in love with it!! For this recipe, you do not need one, a hand mixer will work just fine! Okay, let’s get to the fun part, shall we?!
3/4 cup pecans
1/2 cup (1 stick) unsalted butter at room temperature
1/3 cup sugar (plus more for coating)
1 teaspoon pure vanilla extract
1/8 teaspoon fine sea salt
1 cup all purpose flour
Preheat over to 350F
Toast the Pecans in a pan until warm and crisp, about 5-6 minutes
With an electric stand mixer, cream butter and 1/3 cup sugar until fluffy, about a minute.
Beat in salt, vanilla, and flour, just until dough comes together. Using your hands, fold in pecans.
Separate dough into 12 pieces; squeeze down to shape into balls.
Roll in sugar. Place 3 inches apart, on a baking sheet. Gently flatten the rounds and bake until golden brown. Rotate the cookies half way through
Let it cool on a cooling rack for a few minutes and enjoy with tea or milk
