Lavender shortbread cookies.. do I even need to say more?! It’s amazing how easy this cookie recipe is and turns out SO AMAZING! I’m not even joking! Try it for yourself!
1 cup salted butter, softened
1/2 cup sugar
3 tablespoons honey
2 cups flour
pinch of salt
2 teaspoons dried lavender – I got mine from the Lavender Farm we visited back in 2019
In a large bowl of the bowl of a stand mixer, cream together the butter, sugar, and honey until light and fluffy . Add the flour, salt, and lavender and mix until combined . Place two sheets of parchment on the counter and divide the dough in half between the sheets . Shape the dough into 2 logs that are about 1 1/4 inches in diameter. If you would like a square shape, gently press and flatten on top and then turn on the side and do the same . Freeze for thirty minutes or refrigerate for 2+ hours, or until firm. Preheat the oven to 325F. Remove the dough from the fridge or freezer and slice into 1/4 inch slices. Place 1-2 inches apart on parchment lined baking sheet. Bake 15-20 minutes, or until light golden brown. Let cool completely before serving.
