Roasted Cauliflower Soup

This girl is always down to have a full bowl of flavorful soup. It’s filling, nutritious and delicious…Yes, I am that girl that enjoys having a bowl of soup at anytime of the year no matter the season haha and if you’re a soup lover like me, you will LOVE this recipe!

This roasted cauliflower soup is so creamy, flavorful and very easy to make. It’s made of beef broth, coconut milk and roasted cauliflower. It took me about 10 minutes to prepare and roughly about 30-40 minutes to cook


  • 1 Large Cauliflower head cut into into florets
  • 3 Tbsp Olive Oil – divided
  • 1/2 tsp Cumin
  • 1 Large Onion chopped
  • 3 large garlic cloves crushed
  • 3 Cups Beef Broth
  • 1 15oz Coconut Milk
  • 1 tbsp Lemon Juice (I used about 1 and a half Lemon)
  • Chopped Parsley or Cilantro- whatever you prefer


  1. Preheat the Oven 425F and line a baking sheet with parchment paper
  2. Place the florets on the sheet, drizzle 2 tbsp olive oil, cumin and salt and toss. Once the oven is preheated, place the baking sheet in the oven and let it cook until tender – about 25-30 minutes
  3. While the florets are getting cooked, heat the remaining 1tbsp of Olive oil in a soup pot and fry the onions until soft and translucent
  4. Add garlic and stir until fragrant
  5. Add broth and reduce the heat to low until the cauliflower is done. Transfer the florets into the pot, stir and pour everything into a powerful blender or puree with a hand blender until reached your desired consistency
  6. Lastly, add in the coconut milk, lemon and add fresh parsley
