Curried Cauliflower Soup

The one thing other than snow falls, hot chocolates, cozy nights and lots of banana breads, is soups, that I love during the Winter. Honestly speaking, I am always down to have a good, hearty bowl of soup.

In today’s post I am sharing this very delicious and easy soup recipe I came across and loved. Add some cheesy garlic bread on the side and you’re golden. With the prepping of ingredients to the cooking, it all takes a total of 30 mins. Quick and easy recipes are always my go to and this is one of them

What you will need

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, chopped
  • 1 medium head of cauliflower, cut into florets and stem removed
  • 5 tsp curry powder
  • 1 liter of chicken broth
  • 1 cup full fat coconut milk
  • Salt & pepper to taste

Method

  1. Heat the olive oil in a large pot on medium-high heat then add the onions and garlic and let cook for 2-3 minutes
  2. Add the cauliflower and curry powder, and mix everything together letting cook for 1-2 minutes, until fragrant
  3. Add the broth and coconut milk to the pot and bring to a boil, then cover and let simmer for 20 minutes or until the cauliflower is tender (poke to check for readiness) 
  4. Use a hand blender or carefully transfer the soup in small batches to a blender, and blend until smooth
  5. Season with salt and pepper to your taste
